If anyone loves breakfast food more than Ron Swanson from Parks And Recreation, who famously said, “I like pretty, dark-haired women and breakfast food.” and used those words to guide his life, it would be us.

Breakfast, so much more than the meal to start your day; It is the first chance to shamelessly indulge in the gluttonous types of meals that set your whole day off to a beautiful start. You can make it savory, or sweet, light and fresh, or fried and sauced up. It is a thing of ravenous beauty.

One of our favorite places to go all out when it comes to breakfast is Eatology in Vernon, B.C. We have literally driven an hour from Kamloops on a Sunday morning just to pop in there for a late breakfast. This modern, cheery, female-owned take on a greasy spoon is located in the old Greyhound station in Downtown Vernon. This boho-inspired West Coast vibes restaurant frequently has a line wrapped around the building churns through orders with a focus on speed without losing an ounce of locally sourced, full-of-love flavors people have come to know them for. Never let the line discourage you; these (mostly) girls are fast, and their order-first method means take-out and eat-in diners are all processed at the till like a beautiful, complicated ballet. It’s magical to see.

On our latest trip to Eatology after a weekend away at the stunning Tin Poppy cabins in Enderby, we went all out and indulged in their Chicken & Waffles, Big Breaky, and Classic Poutine. For good measure, you know.

Their chicken and waffles are the things of my late-night dreams. The chicken is tender, moist, and covered in a thick layer of Panko that crackles and sizzles as you bite into it. The waffles are light and fluffy and have the soft taste of butter throughout every bite. On the side, you get huge portions of housemade honey mustard and Canadian maple syrup to drown each morsel in. Our tip, mix them together into a sticky, dripping mess and enjoy the dance between sweet and savory in every bite.

The Big Breaky is just that, a big, beautiful plate of the classic breakfast foods infused with love and a whole lot of butter. Their wonderfully crispy hashbrown act as a blanket for the pile of eggs and sausage, ham or bacon, and a side of toast. Their sausage is our favorite; it is meaty and well-spiced, nor too textured, and perfectly grilled for a crispy skin snap with every bite. A truer classic breakfast does not exist.

As for the poutine, a subtle nod at their extensive list of lunch foods we have yet to try was both classic and inventive at the same time. The gravy was piping hot and meaty, in the way you want gravy to be meaty. The cheese curds were fresh and springy and gave that oh-so-satisfying stretch to every bite. It was a perfect end to an already indulgent meal.
